The Perfect Side Dish for Smoked Meats
Smoked Loaded Cheesy Potatoes are an ideal side dish for any smoked meat. I’m definitely a meat-and-potatoes kind of person, and when bacon is involved, it’s even better. These potatoes were a hit with both adults and kids.

Loaded potatoes are always one of my favorite dishes. We usually have them as mashed potatoes, but this casserole was the perfect side dish. I love to smoke low and slow, so having a side dish to smoke alongside meat like Prime Rib is the perfect combination! These potatoes are easy to make with steaks, not just Prime Rib. I smoked this on my Pitboss Pro 1100.
Smoked Loaded Cheesy Potatoes Ingredients
- Butter
- Bacon
- Minced Garlic
- Green Onion
- Gold Potatoes – You can use other potatoes, but these are my favorite in dishes like this.
- Salt
- Pepper
- Mexican Cheese
- Cream Cheese
- Milk
- Sour cream

How To Make Smoked Loaded Cheesy Potatoes
While peeling the potatoes, start a pot of boiling water for your potatoes. Cut up your potatoes into chunks for easier boiling. Boil the potatoes until they are ready to be mashed. Start your smoker rolling smoke if you aren’t already smoking other food.
Strain the potatoes and allow them to drip dry in an over-the-kitchen-sink strainer. Place the butter, cream cheese, bacon, garlic, salt, and pepper in the mixing bowl.
Dump the strained potatoes into the mixing bowl, and start the mixer to mix at low speed. Once it has mixed quite a bit, add more milk if needed and some cheese.
Spray a casserole pan with a nonstick spray; the pan I cooked in was a 4.8 Quart Pyrex. If you are using glass, it will be stained, so use one that is okay if it gets stained by the smoker.
Spread the mashed potatoes into your casserole pan and top with more cheese, bacon, and cut green onions.
Place the cheesy potatoes on the smoker, and smoke for about an hour if smoking at 225 degrees. If smoking at a lower temperature, the time will increase, and the cooking time will decrease if smoking at a higher temperature. Serve and enjoy once they are done!

What to Serve With Pit Boss Smoked Cheesy Potatoes
The sky is the limit; you can even serve these as is or with a main dish. I have been known to make them and eat them! My favorite is to serve the potatoes with red meat, but I am a meat-and-potatoes guy. The first time I made them, I served them with prime rib, a total win!

How To Store Leftover Loaded Cheesy Potatoes
Store in an air-tight container in the fridge for up to 5 days. The Pyrex pan that I smoke mine in has a lid that works great for this. You could freeze them, but I have not been a fan of how they are after freezing.
Best Way To Reheat Smoked Cheese Potatoes
You can throw these in the microwave and reheat them this way. The oven is the best way to reheat your potatoes evenly. Pull the potatoes you want to reheat from the fridge and allow them to reach room temperature. Either cover the potatoes with foil or an oven-safe lid. Allow them to reheat for about 15 or 20 minutes until warm.
